With tender chicken, vibrant vegetables, and thick noodles, it’s a quick midweek dinner that feels like a weekend treat.

Ingredients

  • 2 chicken breasts, thinly sliced
  • 2 nests of medium egg noodles
  • 1 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 2 garlic cloves, minced
  • 3 tbsp Blazing Szechuan Sauce or chilli garlic sauce
  • 1 tbsp soy sauce
  • Spring onions and sesame seeds, optional garnish

Method

  1. Cook the noodles:
    Boil the noodles according to packet instructions, usually 4 to 5 minutes. Drain and set aside.
  2. Stir fry the chicken:
    Heat vegetable oil in a wok or pan. Add the chicken and cook for 5 to 6 minutes until browned and fully cooked.
  3. Add vegetables and sauce:
    Add the sliced onion, red pepper, and garlic. Stir fry for 2 to 3 minutes. Add the Szechuan Sauce and soy sauce, then mix well.
  4. Combine with noodles:
    Add the drained noodles and toss everything together over medium heat until evenly coated and piping hot.
  5. Serve:
    Garnish with spring onions and sesame seeds if desired.
