What is the difference between a peri peri sauce and a peri peri marinade? +
A peri peri marinade is used before cooking. You coat raw chicken and leave it to soak in flavour. A peri peri sauce is used after cooking, as a glaze, a basting sauce or a dip. Blazing makes both: wet peri peri marinades in mild, medium, hot and extra hot, and peri peri sauces in 960ml and 5kg sizes.
How long should I marinate chicken in a Blazing marinade? +
Marinating time depends on the product, from 2 hours up to 24 hours in the fridge. The longer you marinate, the more flavour the chicken takes on, so check the directions on each product. For the Nashville Spicy Marinade, use 30g of powder per 1kg of raw chicken, mix well into damp chicken, then cover and refrigerate for 12–24 hours.
How do I get extra crispy fried chicken like a chicken shop? +
Use a double breading. Coat the marinated chicken evenly in a Blazing breading, dip it briefly in cold water, then bread it again. Fry until golden and fully cooked through in an open fryer or a pressure fryer such as a Henny Penny. Blazing breadings include Classic, Premium Original, Extra Crispy, Pepper, Spicy and Zingy.
How do I make Nashville hot chicken with Blazing products? +
Use the four-step Blazing Nashville range. Marinate the chicken in Nashville Spicy Marinade (30g per 1kg), then double-coat it in Nashville Crispy Breading and fry. Mix 20g of Nashville Dipping Oil powder with 80g of rapeseed oil, keep it at 50°C and dip the hot chicken in it. Finish with Insane Hot Dust to taste.
